When I was a little girl, we would stop at the Nut Tree in Vacaville on the way to our cabin at Lake Tahoe from Sonoma. As you entered the door, on the right was a cookie counter with these amazing cookies. They were beautifully decorated and they would personalize a cookie for you with your name on it if you wanted. It was a big treat to get one of these cookies. They were so sweet and delicious and would last a while. They were big, like the size of your hand and they were iced with Royal Icing so there was a sweet layer over the top of the spicy honey cookie. They are definitely NOT gingerbread…there is no ginger in them. My decorations are not as beautiful as the ones on the cookies that were made at the Nut Tree, but I’m happy with them, they taste the same! It really does help if you make the dough ahead and let it rest in your fridge. Just make sure you take the dough out and let it warm up before you try to roll them. I make the dough one day, roll and bake the cookies another and frost them on yet another day.

This is the same mincemeat recipe as the Fall 2014 mincemeat pie recipe. Even not doubleing the recipe it makes up enough for about four pies and keeps fairly well. So I had plenty to make up a pie for Christmas Eve dessert. As can be seen I wanted to make it a little special by trying to make it look like holly leaves and berries. Colored sugar was used on the leaves and berries. Shot December 24, 2014.

This year I’ve found a muffin recipe which makes use of my Christmas pudding leftovers. They’re very easy to make, I haven’t thrown any old pudding away and even more importantly they taste delicious! Yum!
