Beau and I have enjoyed gourmet sausages as meatballs since watching a Jamie Oliver show where he did just that.
– 6 gourmet sausages (Beau had a mix of italian, chorizo etc. We like-a the spicy sausage!)
– 1/2 zuchinni (chopped)
– 1/2 a head of brocolli (chopped)
1) slice through the skin of each sausage and squeeze out meat ball sized amounts. You may choose to shape them into balls if you want
2) Fry them in a pan until cooked through
3) Add the veg
4) Serve and eat
We should probably had more veg, but thats all we had. Must buy more! Also, Beau made this, then I cooked the quinoa in which time it cooled so he reheated it and the veg got a bit sad looking in the process. Still delicious!
